the levels of beta-glucans have defined the quality of filtration, but Ultraflo Max lowers arabino-xylan values in addition to decreasing beta-glucans. Recent work has shown that filtration rates can be significantly influenced by polysaccharides other than beta-glucans,
in particular arabino-xylanas, which are polysaccharides containing a backbone of xylan to which side chains of single arabinose units are attached.
Application:
Ultraflo Max has been developed specifically for use by brewers in the mashing process in order to degrade the remaining cell wall material in the wort in order to reduce
viscosity, ensuring longer and consistent wort and beer filtration cycles with all malt types.
